My post about Daily Nibbles’ Pumpkin Spiced Lattes got me thinking, and since I had only used one tablespoon of the entire can of pumpkin for that recipe, I had plenty left over to experiment with my idea. Luckily, I did not set the kitchen on fire. This time.
I was thinking about how much I loved pumpkin lattes but hate the colossal mess they make for ONE drink. What if I wanted to have warm, pumpkin flavored drink in the evening? What could I make that would still taste just as delicious with less mess and no caffeine? Hot chocolate! No. WHITE hot chocolate! It was like a gift sent to my feeble little brain from the gods and I was so stoked I ran to the kitchen like my ass was on fire to work up a recipe, this recipe.
Pumpkin White Hot Chocolate
2 cups milk (I used 2%)
1/3 cup white chocolate chips
1 1/2 tablespoons pumpkin purée
1/4 teaspoon of pumpkin pie spice
whipped cream (optional)
In a small saucepan, combine milk and canned pumpkin; heat until warm. Add white chocolate chips and spices and stir constantly until chips have melted and milk is steaming. Pour into cups and top with whipped cream. Serves 2.
Just now, as I sat down with the notepad containing my recipe, I realized that I forgot to take a picture of my delicious concoction for posterity. This started a thought process that lead to the realization that I may not have been the first person to think up such a thing so, out of curiosity, I Googled it. disappointingly, I’m NOT the first person to combine white chocolate and pumpkin. But it’s still comforting to know that I whipped up this little gem all by myself. So there.
